- 1 lb chicken breast, sliced
- 4 slices turkey bacon, chopped
- 2 cups fresh spinach
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup sour cream
- 1 cup chicken broth
- 2 tablespoons flour
- 2 tablespoons olive oil
- Salt and pepper to taste
- Cooked egg noodles or rice for serving
Instructions
- In a large skillet, heat olive oil over medium heat. Add the chopped turkey bacon and cook until crispy. Remove and set aside.
- In the same skillet, add sliced chicken breast and cook until browned and cooked through. Remove and set aside.
- Add onion and garlic to the skillet, cooking until softened and fragrant, about 3-4 minutes.
- Sprinkle flour over the mixture, stir well to combine, and slowly pour in chicken broth, stirring until thickened.
- Lower heat and mix in sour cream and spinach, stirring until spinach wilts down.
- Return chicken and bacon to the skillet, toss to combine, and season with salt and pepper to taste.
- Serve over cooked egg noodles or rice.
Notes
For extra flavor, garnish with fresh herbs like parsley or chives. Serve with a side of steamed vegetables or a simple green salad.
