- 4 boneless, skinless chicken breasts
- 1 cup brie cheese, rind removed and cut into small pieces
- 1/2 cup cranberry sauce
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- Olive oil
- Toothpicks or kitchen twine
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix together the brie cheese, cranberry sauce, and chopped parsley until well combined.
- Carefully cut a pocket in each chicken breast, being careful not to slice all the way through. Season both sides with salt and pepper.
- Stuff each chicken breast with the cranberry brie mixture and secure the openings with toothpicks or kitchen twine.
- Heat olive oil in a skillet over medium heat and sear the stuffed chicken breasts on both sides until golden brown.
- Transfer the seared chicken to a baking dish and bake for 20-25 minutes until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Remove the chicken from the oven and let it rest for a few minutes.
- Serve your stuffed chicken hot.
Notes
For a beautiful presentation, slice each stuffed chicken breast in half to reveal the colorful filling. Serve with roasted vegetables or a green salad.
