- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup rolled oats
- 1 cup shredded coconut
- 1 cup semisweet chocolate chips
- 1 cup chopped nuts (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
- Beat in the eggs one at a time, allowing each to blend fully before adding the next. Stir in the vanilla extract.
- In another bowl, mix together the flour, baking soda, and salt. Gradually blend this dry mixture into the creamed mixture.
- Stir in the rolled oats, shredded coconut, semisweet chocolate chips, and chopped nuts if using.
- Using a tablespoon, drop dollops of cookie dough onto ungreased cookie sheets, leaving space between each mound.
- Bake for 10-12 minutes or until the edges are golden brown.
- Let cool on wire racks.

Store leftover cookies in an airtight container for up to a week or freeze for up to 3 months.
