Description

Delicious and hearty cookies that combine oats, chocolate chips, and coconut for a delightful treat.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup rolled oats
  • 1 cup shredded coconut
  • 1 cup semisweet chocolate chips
  • 1 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the eggs one at a time, allowing each to blend fully before adding the next. Stir in the vanilla extract.
  4. In another bowl, mix together the flour, baking soda, and salt. Gradually blend this dry mixture into the creamed mixture.
  5. Stir in the rolled oats, shredded coconut, semisweet chocolate chips, and chopped nuts if using.
  6. Using a tablespoon, drop dollops of cookie dough onto ungreased cookie sheets, leaving space between each mound.
  7. Bake for 10-12 minutes or until the edges are golden brown.
  8. Let cool on wire racks.

Notes

Store leftover cookies in an airtight container for up to a week or freeze for up to 3 months.
