  • 8 oz bowtie pasta
  • 1 lb boneless skinless chicken breast, cut into bite-size pieces
  • 2 cups broccoli florets
  • 4 tbsp unsalted butter
  • 3 cloves minced garlic
  • 1 tsp ranch seasoning mix
  • 1 lemon, zested and juiced
  • 2 tbsp chopped fresh parsley
  • 2 tbsp chopped fresh chives
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add the bowtie pasta and cook according to package directions until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add bite-size chicken pieces and season with salt and pepper. Cook for about 5-7 minutes until golden brown and cooked through.
  3. Push cooked chicken to one side of the skillet. Add butter and let it melt. Stir in minced garlic and ranch seasoning mix, cooking for 1 minute until fragrant.
  4. Add broccoli florets, lemon zest, and lemon juice to the skillet. Toss to coat and cook until broccoli is tender-crisp, about 3-4 minutes. Add cooked pasta and toss all ingredients together. Stir in grated Parmesan cheese, chopped parsley, and chives until evenly distributed. Adjust seasoning as desired and serve hot.
