  • 2 large eggs (room temperature)
  • ½ cup granulated sugar (100g, or coconut sugar)
  • ½ cup unsweetened cocoa powder (43g)
  • ½ cup semi-sweet chocolate chips (60g, plus more for topping)
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 pinch espresso powder (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. Add the cottage cheese, eggs, granulated sugar, and vanilla extract to a high-speed blender. Blend until smooth.
  3. Add the cocoa powder, baking powder, and salt to the blender. Pulse just until combined, then stir in chocolate chips.
  4. Pour the mixture into the prepared pan, smooth the top, and sprinkle additional chocolate chips if desired. Bake for 20-25 minutes.
  5. Let the brownies cool in the pan for at least 30 minutes before refrigerating for 1 hour, then slice into 16 squares.
