- ½ cup granulated sugar (100g, or coconut sugar)
- ½ cup unsweetened cocoa powder (43g)
- ½ cup semi-sweet chocolate chips (60g, plus more for topping)
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 1 teaspoon vanilla extract
- 1 pinch espresso powder (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- Add the cottage cheese, eggs, granulated sugar, and vanilla extract to a high-speed blender. Blend until smooth.
- Add the cocoa powder, baking powder, and salt to the blender. Pulse just until combined, then stir in chocolate chips.
- Pour the mixture into the prepared pan, smooth the top, and sprinkle additional chocolate chips if desired. Bake for 20-25 minutes.
- Let the brownies cool in the pan for at least 30 minutes before refrigerating for 1 hour, then slice into 16 squares.
