Ingredients

  • 1 cup cottage cheese
  • 4 large eggs
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 1/2 cup chopped spinach or other vegetables (like bell peppers, onions)
  • Salt and pepper to taste
  • Cooking spray or olive oil for greasing

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or olive oil.
  2. In a mixing bowl, whisk together the cottage cheese and eggs until well combined.
  3. Stir in the shredded cheese, chopped vegetables, salt, and pepper. Pour the mixture evenly into the greased muffin tin, filling each cup about 3/4 full. Bake for 20-25 minutes, or until the egg bites are set and lightly golden on top.
  4. Allow to cool for a few minutes before removing from the tin. Serve warm.
