A light and airy bread combining cottage cheese and fresh blueberries, perfect for breakfast or a snack.

- 1 cup cottage cheese
- 4 large eggs
- 1/2 cup almond flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup fresh blueberries
- 1 tablespoon honey or sweetener of choice (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Blend the cottage cheese until smooth.
- Separate the egg whites and yolks. Add the yolks to the cottage cheese and mix well.
- Whisk the egg whites until stiff peaks form, then gently fold the almond flour, baking powder, and salt into the cottage cheese mixture, followed by the egg whites and blueberries.
- Spoon the mixture onto the prepared baking sheet and bake for 25-30 minutes or until golden and fluffy.
Notes
Serve plain, with powdered sugar, or topped with Greek yogurt. Store leftovers in an airtight container in the fridge for up to 3 days.
