Description

A light and airy bread combining cottage cheese and fresh blueberries, perfect for breakfast or a snack.


Ingredients

  • 1 cup cottage cheese
  • 4 large eggs
  • 1/2 cup almond flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup fresh blueberries
  • 1 tablespoon honey or sweetener of choice (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Blend the cottage cheese until smooth.
  3. Separate the egg whites and yolks. Add the yolks to the cottage cheese and mix well.
  4. Whisk the egg whites until stiff peaks form, then gently fold the almond flour, baking powder, and salt into the cottage cheese mixture, followed by the egg whites and blueberries.
  5. Spoon the mixture onto the prepared baking sheet and bake for 25-30 minutes or until golden and fluffy.

Notes

Serve plain, with powdered sugar, or topped with Greek yogurt. Store leftovers in an airtight container in the fridge for up to 3 days.
