Description

A comforting and creamy broccoli cheddar soup that captures the rich flavors of the classic dish from Panera.


Ingredients

  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup carrots, diced
  • 4 cups broccoli florets
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 cups cheddar cheese, shredded
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the diced onion and garlic, sautéing until softened.
  3. Add the carrots and broccoli, then pour in the vegetable broth. Bring to a boil, then reduce heat and simmer for about 10 minutes or until the vegetables are tender.
