Description

Warm and comforting Coffee Cake, perfect for breakfast, brunch or afternoon coffee breaks, featuring a soft texture and hints of cinnamon with a nutty crunch.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 2 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup chopped nuts (optional)
  • 1 tablespoon cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. Cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  3. In another bowl, combine the all-purpose flour, baking powder, and salt. Whisk to ensure even distribution.
  4. Gradually add the dry ingredients to the wet mixture, alternating with the milk, until fully combined. Pour half of the batter into the prepared pan.
  5. Optionally, sprinkle half of the chopped nuts and half of the cinnamon on top of the batter.
  6. Pour the remaining batter on top and repeat the process with the remaining nuts and cinnamon.
  7. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

Serve warm with a dusting of powdered sugar or icing. Store in an airtight container for up to 3 days at room temperature, or refrigerate for up to a week.
