Coconut Lamb Curry with Chickpeas and Garlic Naan is a delightful dish that combines the rich flavors of lamb and coconut milk with wholesome chickpeas and aromatic spices. This dish not only warms the heart but also delights the palate with its fragrant spices and creamy textures. When served with freshly made garlic naan, it creates a perfect meal for family dinners or special gatherings. Let’s dive into creating this scrumptious dish!

Ingredients

Scale
  • 1 lb lamb, cubed
  • 1 can coconut milk
  • 1 can chickpeas, drained and rinsed
  • 2 onions, chopped
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tablespoons curry powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • Fresh cilantro for garnish
  • 2 cups all-purpose flour (for naan)
  • 1 teaspoon baking powder (for naan)
  • 2 tablespoons yogurt (for naan)
  • Water (as needed for naan)
  • 4 cloves garlic, minced (for naan)
  • 2 tablespoons butter (for naan)

Instructions

Step 1: Preparation

In a large pot, heat 2 tablespoons of vegetable oil over medium heat. Add the chopped onions and sauté until they become translucent, about 5 minutes. Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.

Step 2: Mixing

Add the cubed lamb to the pot, browning all sides for about 5-7 minutes. Make sure to stir occasionally to ensure even cooking. After the lamb is browned, sprinkle in 2 tablespoons of curry powder, 1 teaspoon of cumin, and season with salt and pepper to taste. Mix well to coat the lamb evenly with the spices.

Step 3: Cooking

Pour in the can of coconut milk and add the drained chickpeas. Stir everything together and bring to a simmer. Cover the pot and let it cook for 45 minutes, allowing the flavors to meld and the lamb to become tender.

Step 4: Finishing

While the curry is simmering, prepare the garlic naan. In a mixing bowl, combine 2 cups of all-purpose flour and 1 teaspoon of baking powder. Add in 2 tablespoons of yogurt, minced garlic, and gradually add water to form a soft dough. Let the dough rest for 30 minutes. After resting, roll out portions, and cook on a preheated skillet until golden brown on each side, brushing with melted butter afterward.

Notes

  • For a spicier kick, feel free to add chopped green chilies or red pepper flakes when cooking your lamb.
  • Try using other cuts of meat like chicken or beef for a different flavor twist.
  • If you want a lighter version, use lean lamb or opt for a protein alternative like chickpeas or tempeh.
  • Always taste and adjust the seasoning at different stages of cooking to ensure a well-balanced flavor.
