Ingredients

  • 2 lbs beef chuck, cut into cubes
  • 1 can (14 oz) coconut milk
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tablespoons curry powder
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 2 cups beef broth
  • 12 tablespoons brown sugar
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Cooked rice or naan for serving

Instructions

  1. In a large pot, heat a bit of oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 3-4 minutes.
  2. Add the minced garlic and grated ginger to the pot, cooking for another minute until fragrant.
  3. Stir in the beef cubes and brown them on all sides, about 5-7 minutes. Sprinkle in the curry powder, soy sauce, and fish sauce, stirring well to combine.
  4. Pour in the beef broth and coconut milk, then add the brown sugar, salt, and pepper. Bring to a boil, then reduce heat and let simmer uncovered for 2-3 hours, until the beef is tender. Garnish with cilantro and serve hot with rice or naan.

Notes

For extra tender beef, let it simmer longer. Adjust sugar to taste for balancing spice. Add veggies for nutrition.
