Classic Ensaymada Bread

Description

A beloved Filipino pastry known for its fluffy texture and sweet, buttery flavor, perfect for breakfast, snacks, or desserts.

Ingredients

Scale
  • 4 cups all-purpose flour
  • 1/2 cup sugar
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup milk, warm
  • 1/4 cup grated cheese (optional, for topping)
  • 1/4 cup butter, melted (for brushing)
  • 1/2 cup grated cheese (for topping)

Instructions

  1. In a mixing bowl, combine warm milk and sugar. Sprinkle the yeast over the top and let it sit for about 5-10 minutes until frothy.
  2. In a large bowl, mix the flour and salt. Make a well in the center and add the yeast mixture, eggs, and softened butter. Stir until you have a shaggy dough.
  3. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.
  5. Punch down the dough and roll it out into a rectangle. Spread softened butter over the surface and sprinkle with sugar and cheese if using.
  6. Roll the dough tightly into a log, then cut into 12 equal pieces.
  7. Place the pieces in greased muffin tins or a baking dish, cover again, and let rise for another 30-45 minutes.
  8. Preheat the oven to 350°F (175°C). Bake for 15-20 minutes or until golden brown on top.
  9. Brush with melted butter and top with grated cheese. Serve warm.
