A delightful twist on classic banana bread with warm, spicy cinnamon and ripe bananas for a moist, flavorful treat.

- 3 ripe bananas, mashed
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 tablespoon ground cinnamon
- 1/4 cup brown sugar
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- In a mixing bowl, mix the mashed bananas with the melted butter until well combined.
- Stir in the baking soda and salt, then add the sugar, beaten egg, and vanilla extract. Mix well until fully combined.
- Gently stir in the flour until just combined; be careful not to over-mix.
- In a small bowl, mix the brown sugar and ground cinnamon together.
- Pour half of the banana batter into the prepared pan. Sprinkle half of the cinnamon mixture on top, then layer the remaining banana batter, finishing with the rest of the cinnamon mixture.
- Use a knife to swirl the cinnamon mixture into the batter creating a beautiful marbled effect.
- Bake for about 60-65 minutes or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pan for a few minutes before transferring it to a wire rack to cool completely before slicing.
Notes
Use overripe bananas for best results. Add nuts or chocolate for extra flavor. Store in an airtight container for up to 3 days.
