  • 1 cup powdered sugar (for icing)
  • 1 tablespoon milk (for icing)
  • 1/2 teaspoon vanilla extract (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the flour, baking powder, salt, and cinnamon.
  3. Cream together the softened butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, mixing until combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
  5. On a lightly floured surface, roll out the dough into a rectangle about 1/4-inch thick.
  6. In a small bowl, mix together the brown sugar and cinnamon for the filling. Sprinkle this mixture evenly over the dough.
  7. Roll the dough tightly into a log and slice it into cookies about 1/2-inch thick.
  8. Place the cookies on the prepared baking sheet and bake for 10-12 minutes, or until lightly golden.
  9. While the cookies are baking, mix the powdered sugar, milk, and vanilla extract in a small bowl to make the icing.
  10. Once the cookies are done, let them cool slightly, then drizzle the icing over the warm cookies.
