- 1 cup brown sugar, packed

Instructions
- Cream together the butter, granulated sugar, and brown sugar in a large mixing bowl until light and fluffy.
- Add eggs one at a time, mixing well after each addition, and then add vanilla extract.
- In a separate bowl, whisk together flour, baking soda, cinnamon, salt, and nutmeg.
- Gradually mix the dry ingredients into the wet ingredients until no flour streaks remain.
- Portion out the dough onto ungreased baking sheets, leaving space between each cookie.
- Preheat the oven to 350°F (175°C) and bake for 8-10 minutes until slightly golden around the edges.
- Cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.
- Dust with powdered sugar before serving, if desired.
Notes
For chewier cookies, use light brown sugar and slightly underbake. Chill the dough if sticky.
