Description

Ingredients

  • ½ cup cocoa powder
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • ½ cup peanut butter
  • 2 large eggs
  • ½ cup milk
  • ⅓ cup vegetable oil
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Whisk together the all-purpose flour, cocoa powder, baking soda, baking powder, and salt in a bowl.
  3. Mix the granulated sugar, brown sugar, and peanut butter in another bowl until smooth, then add the eggs, milk, vegetable oil, and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, stirring gently until just incorporated.
  5. Spoon the batter into the prepared muffin tins, filling each cup about 3/4 full.
  6. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool in the pan for about 5 minutes, then transfer to a wire rack to cool completely before serving.

Notes

Muffins can be enjoyed warm or at room temperature. Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months.
