- 1 ½ cups all-purpose flour
- ½ cup cocoa powder
- 1 tsp baking soda
- 1 tsp baking powder
- ½ tsp salt
- ¾ cup granulated sugar
- ¼ cup brown sugar
- ½ cup peanut butter
- 2 large eggs
- ½ cup milk
- ⅓ cup vegetable oil
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- Whisk together the all-purpose flour, cocoa powder, baking soda, baking powder, and salt in a bowl.
- Mix the granulated sugar, brown sugar, and peanut butter in another bowl until smooth, then add the eggs, milk, vegetable oil, and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, stirring gently until just incorporated.
- Spoon the batter into the prepared muffin tins, filling each cup about 3/4 full.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for about 5 minutes, then transfer to a wire rack to cool completely before serving.
Notes
Muffins can be enjoyed warm or at room temperature. Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months.
