Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Add the vanilla and peppermint extracts. In another bowl, whisk together the flour, cocoa powder, and salt. Gradually mix the dry ingredients into the wet ingredients until a smooth dough forms.
- Roll the dough into small balls and place them on the baking sheet, making an indentation in the center of each ball.
- Bake for 10-12 minutes until edges are set but centers are soft.
- Melt the chocolate chips in a microwave-safe bowl. Fill each thumbprint with melted chocolate after cookies cool.
- Dust with powdered sugar before serving if desired.
