Description

Ingredients

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 1 3/4 cups unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes.
  4. Carefully stir in the boiling water. The batter will be thin but this is necessary for moisture.
  5. Pour the batter into the prepared cake pans, smoothing the tops as needed.
  6. Bake for 30-35 minutes or until a toothpick comes out clean from the center.
  7. Allow cakes to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
  8. Frost with chocolate frosting or whipped cream once cooled.

Notes

For a lighter touch, top slices with fresh berries or whipped cream. Store in an airtight container up to 3 days at room temperature.
