Ingredients

- 2 cups all-purpose flour
- 2 cups sugar
- 1 3/4 cups unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
Instructions
- Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.
- Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes.
- Carefully stir in the boiling water. The batter will be thin but this is necessary for moisture.
- Pour the batter into the prepared cake pans, smoothing the tops as needed.
- Bake for 30-35 minutes or until a toothpick comes out clean from the center.
- Allow cakes to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
- Frost with chocolate frosting or whipped cream once cooled.
Notes
For a lighter touch, top slices with fresh berries or whipped cream. Store in an airtight container up to 3 days at room temperature.
