- 1 3/4 cups all-purpose flour
- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup heavy cream
- 8 ounces semi-sweet chocolate, chopped
- 2 tablespoons unsalted butter
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, mix the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
- Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes until smooth. Stir in the boiling water; the batter will be thin.
- Pour the batter evenly into the prepared pans. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Allow cakes to cool in pans for 10 minutes, then transfer to wire racks to cool completely.
- For the ganache, heat the cream until it simmers, pour it over chopped chocolate and butter, and stir until smooth.
- Once cakes are completely cool, spread ganache over the top of one layer, place the second layer on top, and pour remaining ganache over the entire cake.
Notes
For easier slicing, use a hot, dry knife to cut through the ganache smoothly. Store leftover cake in an airtight container.
