Ingredients

  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup toffee bits
  • 1 cup semi-sweet chocolate chips
  • Sprinkles (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  5. Fold in the toffee bits.
  6. Drop spoonfuls of dough onto ungreased baking sheets, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are golden brown.
  8. Let the cookies cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
  9. In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring until smooth.
  10. Dip the cooled cookies halfway into the melted chocolate, allowing any excess to drip off.
  11. Place the dipped cookies on parchment paper and sprinkle with additional toffee bits or sprinkles if desired.
  12. Let the chocolate set before serving.

Notes

Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze once chocolate has set completely.
