- 4 large orange peels
- 1 cup granulated sugar
- 1 cup water
- 6 oz dark chocolate
- 1/4 cup extra granulated sugar (optional, for coating)
Instructions
- Wash the oranges thoroughly. Slice off the tops and bottoms, then score the peels into quarters. Gently remove the peels and slice them into thin strips.
- Place the peels in a pot of boiling water for 2 minutes, then drain. Repeat this blanching process two more times with fresh water each time to reduce bitterness.
- In a saucepan, combine 1 cup water and 1 cup sugar. Bring to a simmer, add the orange peels, and cook for 45–60 minutes until they are translucent. Remove the peels and let them dry on a wire rack for several hours or overnight.
- Melt the dark chocolate using a double boiler or microwave in short bursts. Dip each peel halfway into the chocolate and place them on parchment paper. Optionally, sprinkle with extra sugar before the chocolate sets.
- Allow the chocolate to harden fully at room temperature or chill in the fridge. Store in an airtight container in a cool, dry place.
Notes
Ensure that the orange peels are well-dried before dipping into the chocolate. You can use milk chocolate or white chocolate for a sweeter touch.
