Ingredients

- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 3/4 cup brown sugar, packed
- 1 teaspoon vanilla extract
- 2 large eggs
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chocolate chips
- 1 cup shelled pistachios, roughly chopped
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter, granulated sugar, and brown sugar until smooth. Add in the vanilla extract and eggs, one at a time, mixing well after each addition.
- In another bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet mixture, stirring until just combined.
- Gently fold in the chocolate chips and chopped pistachios.
- Drop rounded tablespoons of dough onto ungreased baking sheets, leaving space between each.
- Bake for 10-12 minutes, or until cookies are golden brown around the edges.
- Allow cookies to cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
Notes
Best served warm with milk; can be frozen for up to three months.
