Ingredients

  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup brewed coffee, cooled
  • 1/2 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin pan with paper liners.
  2. In a large bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, combine the cooled brewed coffee, vegetable oil, egg, and vanilla extract, whisking until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined; gently fold in the chocolate chips.
  5. Divide the batter evenly among the muffin cups, filling each about two-thirds full. Bake for 18-20 minutes or until a toothpick comes out clean.
  6. Allow the muffins to cool slightly in the pan before transferring them to a wire rack.
