- 1 cup brewed coffee, cooled
- 1/2 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin pan with paper liners.
- In a large bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, and salt.
- In another bowl, combine the cooled brewed coffee, vegetable oil, egg, and vanilla extract, whisking until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined; gently fold in the chocolate chips.
- Divide the batter evenly among the muffin cups, filling each about two-thirds full. Bake for 18-20 minutes or until a toothpick comes out clean.
- Allow the muffins to cool slightly in the pan before transferring them to a wire rack.
