A delightful no-bake dessert combining rich chocolate and sweet cherries with creamy layers and a crunchy nut crust.

- 1 cup all-purpose flour
- ½ cup crushed nuts
- ¼ cup granulated sugar
- 8 tablespoons salted butter, melted
- 1 can cherry pie filling
- 8 ounces light cream cheese, softened
- 1 cup light Cool Whip
- 1 cup powdered sugar
- 2 packages sugar-free chocolate instant pudding mix
- 3 cups cold skim milk
- ½ cup dark chocolate shavings or sugar-free chocolate jimmies (optional)
Instructions
- Preheat your oven to 375°F (190°C). In a bowl, combine flour, crushed nuts, and sugar. Pour in melted butter and mix until crumbly.
- Press the mixture into the bottom of a 9×13 inch baking dish. Bake for 10 minutes and let cool.
- Spread the cherry pie filling evenly over the cooled crust.
- Beat the cream cheese until smooth. Fold in Cool Whip and powdered sugar until combined. Spread over cherry layer.
- Whisk pudding mix with cold milk for about 2 minutes until thick. Spread over the cream cheese layer.
- Top with remaining Cool Whip and sprinkle with chocolate shavings if desired.
- Refrigerate for at least 2-3 hours or overnight before serving.
Notes
For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend. Can be customized with different fruit fillings or added flavors.
