Description

A delightful no-bake dessert combining rich chocolate and sweet cherries with creamy layers and a crunchy nut crust.


Ingredients

  • 1 cup all-purpose flour
  • ½ cup crushed nuts
  • ¼ cup granulated sugar
  • 8 tablespoons salted butter, melted
  • 1 can cherry pie filling
  • 8 ounces light cream cheese, softened
  • 1 cup light Cool Whip
  • 1 cup powdered sugar
  • 2 packages sugar-free chocolate instant pudding mix
  • 3 cups cold skim milk
  • ½ cup dark chocolate shavings or sugar-free chocolate jimmies (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). In a bowl, combine flour, crushed nuts, and sugar. Pour in melted butter and mix until crumbly.
  2. Press the mixture into the bottom of a 9×13 inch baking dish. Bake for 10 minutes and let cool.
  3. Spread the cherry pie filling evenly over the cooled crust.
  4. Beat the cream cheese until smooth. Fold in Cool Whip and powdered sugar until combined. Spread over cherry layer.
  5. Whisk pudding mix with cold milk for about 2 minutes until thick. Spread over the cream cheese layer.
  6. Top with remaining Cool Whip and sprinkle with chocolate shavings if desired.
  7. Refrigerate for at least 2-3 hours or overnight before serving.

Notes

For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend. Can be customized with different fruit fillings or added flavors.
