- 2 cups cooked rice
- 1 cup cooked chicken, diced
- 2 tablespoons vegetable oil
- 2 eggs, beaten
- 1 cup mixed vegetables (peas, carrots, corn)
- 3 green onions, chopped
- 3 tablespoons soy sauce
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the beaten eggs and scramble until fully cooked, then remove from the skillet.
- In the same skillet, add the cooked chicken and sauté for a few minutes until heated through.
- Add the mixed vegetables and green onions, and cook until heated through.
- Stir in the cooked rice and mix well, ensuring it’s evenly combined with the chicken and veggies.
- Add the soy sauce, scrambled eggs, salt, and pepper to the mixture, stirring to combine.
- Cook for another 2-3 minutes until everything is heated through and flavors meld together.
