Description

A delicious blend of tender chicken, crisp vegetables, and aromatic rice, this Chinese Chicken Fried Rice is perfect for a quick meal or a casual dinner party.


Ingredients

  • 2 cups cooked rice
  • 1 cup cooked chicken, diced
  • 2 tablespoons vegetable oil
  • 2 eggs, beaten
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 3 green onions, chopped
  • 3 tablespoons soy sauce
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the beaten eggs and scramble until fully cooked, then remove from the skillet.
  3. In the same skillet, add the cooked chicken and sauté for a few minutes until heated through.
  4. Add the mixed vegetables and green onions, and cook until heated through.
  5. Stir in the cooked rice and mix well, ensuring it’s evenly combined with the chicken and veggies.
  6. Add the soy sauce, scrambled eggs, salt, and pepper to the mixture, stirring to combine.
  7. Cook for another 2-3 minutes until everything is heated through and flavors meld together.
  8. Serve hot and enjoy!

Use day-old rice for best results. Customize with additional proteins or vegetables as desired.
