  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives, pitted and sliced
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Combine the rinsed and drained chickpeas, diced cucumber, diced bell pepper, halved cherry tomatoes, finely chopped red onion, crumbled feta cheese, and sliced olives in a large bowl. Stir gently to mix the ingredients evenly.
  2. Whisk together the olive oil, red wine vinegar, dried oregano, and a pinch of salt and pepper in a small bowl. This dressing will enhance the flavors of the salad.
