Description

A heartwarming chicken curry that brings family together with its warm spices and creamy coconut milk.


Ingredients

  • 500g chicken, cut into pieces
  • 2 tablespoons oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 inch ginger, grated
  • 2 tomatoes, chopped
  • 2 teaspoons curry powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • Salt to taste
  • 1 cup coconut milk
  • Fresh cilantro for garnish

Instructions

  1. Heat the oil in a pot over medium heat until shimmering.
  2. Add the chopped onion and sauté until golden brown (5-7 minutes).
  3. Stir in the minced garlic and grated ginger, cooking for 1-2 minutes.
  4. Add the chopped tomatoes and cook until soft, around 5 minutes.
  5. Stir in the curry powder, turmeric, cumin, and coriander powders, cooking for 1 minute.
  6. Add the chicken pieces and salt, stirring to coat well. Cook for a few minutes until chicken starts to turn white.
  7. Pour in the coconut milk, stirring to combine.
  8. Let the curry simmer for 20-25 minutes until the chicken is cooked through and tender.
  9. Garnish with fresh cilantro and serve with rice or naan.

Notes

For a richer flavor, use full-fat coconut milk. Adjust the spice levels according to your taste.
