A heartwarming chicken curry that brings family together with its warm spices and creamy coconut milk.

- 500g chicken, cut into pieces
- 2 tablespoons oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 inch ginger, grated
- 2 tomatoes, chopped
- 2 teaspoons curry powder
- 1 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- Salt to taste
- 1 cup coconut milk
- Fresh cilantro for garnish
Instructions
- Heat the oil in a pot over medium heat until shimmering.
- Add the chopped onion and sauté until golden brown (5-7 minutes).
- Stir in the minced garlic and grated ginger, cooking for 1-2 minutes.
- Add the chopped tomatoes and cook until soft, around 5 minutes.
- Stir in the curry powder, turmeric, cumin, and coriander powders, cooking for 1 minute.
- Add the chicken pieces and salt, stirring to coat well. Cook for a few minutes until chicken starts to turn white.
- Pour in the coconut milk, stirring to combine.
- Let the curry simmer for 20-25 minutes until the chicken is cooked through and tender.
- Garnish with fresh cilantro and serve with rice or naan.
Notes
For a richer flavor, use full-fat coconut milk. Adjust the spice levels according to your taste.
