Description

Delicious and filling burritos filled with savory chicken, fresh bell peppers, and creamy ranch dressing, all wrapped in warm tortillas.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup bell peppers, diced
  • 1 cup ranch dressing
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 4 large flour tortillas
  • 1 can black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. In a large skillet, heat a little olive oil over medium heat. Add the diced bell peppers and cook until tender, about 5 minutes.
  2. In a bowl, combine the cooked chicken, sautéed bell peppers, ranch dressing, black beans, and corn. Stir until well mixed and season with salt and pepper.
  3. Lay out a tortilla and fill it with the chicken mixture and a sprinkle of shredded cheese.
  4. Roll up the tortilla tightly and place seam side down in the skillet. Cook each burrito until golden and crispy, about 2-3 minutes per side.
  5. Serve warm, optionally with additional ranch dressing for dipping.

Notes

For extra flavor, consider adding chopped jalapeños or fresh herbs to the filling.
