Delicious and filling burritos filled with savory chicken, fresh bell peppers, and creamy ranch dressing, all wrapped in warm tortillas.

- 2 cups cooked chicken, shredded
- 1 cup bell peppers, diced
- 1 cup ranch dressing
- 1 cup shredded cheese (cheddar or Mexican blend)
- 4 large flour tortillas
- 1 can black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- In a large skillet, heat a little olive oil over medium heat. Add the diced bell peppers and cook until tender, about 5 minutes.
- In a bowl, combine the cooked chicken, sautéed bell peppers, ranch dressing, black beans, and corn. Stir until well mixed and season with salt and pepper.
- Lay out a tortilla and fill it with the chicken mixture and a sprinkle of shredded cheese.
- Roll up the tortilla tightly and place seam side down in the skillet. Cook each burrito until golden and crispy, about 2-3 minutes per side.
- Serve warm, optionally with additional ranch dressing for dipping.
Notes
For extra flavor, consider adding chopped jalapeños or fresh herbs to the filling.
