- 1 cup chopped bell peppers (any color)
- 1/2 cup ranch dressing
- 1 cup shredded cheese (cheddar or your choice)
- 4 large tortillas
- Salt and pepper to taste
Instructions
- Combine shredded chicken, chopped bell peppers, ranch dressing, and half of the cheese in a large bowl. Season with salt and pepper to taste.
- Lay out the tortillas and evenly distribute the chicken mixture among them.
- Sprinkle the remaining cheese on top of the filling, then roll the tortillas tightly, tucking in the ends as you go.
- Heat a skillet over medium heat and place the rolled burritos seam-side down. Cook for 2-3 minutes on each side until golden and crispy.
- Serve warm with optional toppings such as sour cream, salsa, and avocado.
Notes
For extra flavor, marinate cooked chicken in ranch dressing before shredding. Feel free to add other veggies like black beans or corn for more nutrition.
