Description

Ingredients

  • 2 cups of pasta (your choice)
  • 1 pound of chicken breast, diced
  • 2 tablespoons of olive oil
  • 2 cloves of garlic, minced
  • 1 cup of cherry tomatoes, halved
  • 1 cup of spinach
  • 1 teaspoon of Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. Cook pasta according to package instructions, drain and set aside.
  2. In a large skillet, heat olive oil over medium heat, add minced garlic and cook until fragrant, about 30 seconds.
  3. Add diced chicken to the skillet, cook until browned and cooked through.
  4. Stir in halved cherry tomatoes, spinach, Italian seasoning, salt, and pepper, cooking until spinach is wilted and tomatoes softened, about 2-3 minutes.
  5. Toss the cooked pasta with the chicken and vegetable mixture until well combined and serve warm with grated Parmesan cheese.
