- 8 oz penne pasta
- 2 tablespoons olive oil
- 1 pound chicken breast, diced
- 6 oz Spanish chorizo, sliced
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 cup heavy cream
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the penne pasta according to package instructions, then drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes.
- Add the chorizo, onion, and garlic to the skillet. Cook for another 3-4 minutes until the onions are translucent.
- Stir in the diced tomatoes and heavy cream. Add smoked paprika, salt, and pepper. Bring the mixture to a simmer and cook for 5-10 minutes until the sauce thickens.
- Add the cooked penne to the skillet and toss everything together, ensuring the pasta is well coated with the sauce. Serve hot, garnished with fresh parsley.
Notes
