Description

A delicious combination of savory chicken, spicy chorizo, and creamy sauce with al dente penne pasta.


Ingredients

  • 8 oz penne pasta
  • 2 tablespoons olive oil
  • 1 pound chicken breast, diced
  • 6 oz Spanish chorizo, sliced
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 cup heavy cream
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the penne pasta according to package instructions, then drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Add the chorizo, onion, and garlic to the skillet. Cook for another 3-4 minutes until the onions are translucent.
  4. Stir in the diced tomatoes and heavy cream. Add smoked paprika, salt, and pepper. Bring the mixture to a simmer and cook for 5-10 minutes until the sauce thickens.
  5. Add the cooked penne to the skillet and toss everything together, ensuring the pasta is well coated with the sauce. Serve hot, garnished with fresh parsley.

Notes

Consider serving with garlic bread or a side salad for a complete meal. Leftovers can be stored in the refrigerator for up to 3 days.
