- 1 cup flour
- 1/2 cup sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/4 cup lime juice
- 1 tablespoon lime zest
- 1/2 cup maraschino cherries, chopped
- 1/4 cup cherry juice
- 1/2 teaspoon vanilla extract
- 1/2 cup powdered sugar for frosting
- 1 tablespoon cherry juice for frosting
- Lime slices and cherries for garnish
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. Whisk until blended.
- In another bowl, beat together the softened butter, eggs, lime juice, lime zest, cherry juice, and vanilla extract until smooth.
- Gradually mix the dry ingredients into the wet ingredients until just combined. Fold in the chopped maraschino cherries gently.
- Pour the batter into the prepared cupcake liners, filling each about 2/3 full. Bake for 18-20 minutes or until a toothpick comes out clean.
- Once baked, let the cupcakes cool completely in the muffin tin for about 5 minutes, then transfer them to a wire rack.
- For the frosting, mix the powdered sugar with cherry juice until smooth.
- Frost the cooled cupcakes with the cherry frosting and garnish with lime slices and additional cherries.
Notes
Make sure your butter is at room temperature for a smooth batter. For a stronger lime flavor, increase zest and juice.
