Description

A delightful Italian dessert combining the flavors of cherries and amaretto liqueur with layers of mascarpone and ladyfingers.


Ingredients

  • 1 cup brewed coffee, cooled
  • 3 tablespoons amaretto liqueur
  • 1 cup mascarpone cheese
  • 1 cup heavy whipping cream
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 24 ladyfinger cookies
  • 1 cup fresh cherries, pitted and halved
  • Cocoa powder for dusting

Instructions

  1. Combine the brewed coffee and amaretto liqueur in a shallow dish and set aside.
  2. Beat the mascarpone cheese, sugar, and vanilla extract together in a large mixing bowl until smooth.
  3. Whip the heavy cream in another bowl until stiff peaks form, then gently fold it into the mascarpone mixture.
  4. Dip the ladyfinger cookies briefly into the coffee-amaretto mixture and arrange them in a serving dish. Spread a layer of the mascarpone mixture over the ladyfingers, followed by a layer of halved cherries. Repeat layers until all ingredients are used, finishing with mascarpone on top.
  5. Cover and chill in the refrigerator for at least 4 hours.
  6. Dust the top with cocoa powder and garnish with additional fresh cherries just before serving.

Notes

For a non-alcoholic version, substitute amaretto with almond extract. This dessert is best enjoyed fresh but can be stored for up to 3 days in the refrigerator.
