A delightful Italian dessert combining the flavors of cherries and amaretto liqueur with layers of mascarpone and ladyfingers.
Ingredients

- 1 cup brewed coffee, cooled
- 3 tablespoons amaretto liqueur
- 1 cup mascarpone cheese
- 1 cup heavy whipping cream
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 24 ladyfinger cookies
- 1 cup fresh cherries, pitted and halved
- Cocoa powder for dusting
Instructions
- Combine the brewed coffee and amaretto liqueur in a shallow dish and set aside.
- Beat the mascarpone cheese, sugar, and vanilla extract together in a large mixing bowl until smooth.
- Whip the heavy cream in another bowl until stiff peaks form, then gently fold it into the mascarpone mixture.
- Dip the ladyfinger cookies briefly into the coffee-amaretto mixture and arrange them in a serving dish. Spread a layer of the mascarpone mixture over the ladyfingers, followed by a layer of halved cherries. Repeat layers until all ingredients are used, finishing with mascarpone on top.
- Cover and chill in the refrigerator for at least 4 hours.
- Dust the top with cocoa powder and garnish with additional fresh cherries just before serving.
Notes
For a non-alcoholic version, substitute amaretto with almond extract. This dessert is best enjoyed fresh but can be stored for up to 3 days in the refrigerator.
