A delicious, healthy dish that’s a low-carb pasta alternative, combining spaghetti squash with cheesy goodness and hearty meat sauce.

- 1 medium spaghetti squash
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried Italian herbs
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
- 1 pound ground meat (beef, turkey, or sausage)
- 1 jar (24 oz) marinara sauce
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Brush the insides with olive oil and season with salt, pepper, and Italian herbs. Place the squash halves cut-side down on a baking sheet.
- Roast for about 30-40 minutes or until the flesh is tender.
- While the squash is roasting, cook the ground meat in a skillet over medium heat until browned.
- Drain excess fat, then add marinara sauce and simmer for about 10 minutes.
- Once the squash is done, use a fork to scrape the insides into spaghetti-like strands. Mix in garlic and half of the mozzarella cheese.
- Serve the spaghetti squash topped with meat sauce and sprinkle the remaining mozzarella on top.
- Broil for 2-3 minutes until the cheese is melted and bubbly.
- Garnish with fresh parsley before serving.
Notes
Make sure to properly roast the spaghetti squash until tender. Customize with different veggies or cheeses for variety.
