Cheesy Garlic and Herb Spaghetti Squash with Meat Sauce

Description

A delicious, healthy dish that’s a low-carb pasta alternative, combining spaghetti squash with cheesy goodness and hearty meat sauce.


Ingredients

  • 1 medium spaghetti squash
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried Italian herbs
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • 1 pound ground meat (beef, turkey, or sausage)
  • 1 jar (24 oz) marinara sauce
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  2. Brush the insides with olive oil and season with salt, pepper, and Italian herbs. Place the squash halves cut-side down on a baking sheet.
  3. Roast for about 30-40 minutes or until the flesh is tender.
  4. While the squash is roasting, cook the ground meat in a skillet over medium heat until browned.
  5. Drain excess fat, then add marinara sauce and simmer for about 10 minutes.
  6. Once the squash is done, use a fork to scrape the insides into spaghetti-like strands. Mix in garlic and half of the mozzarella cheese.
  7. Serve the spaghetti squash topped with meat sauce and sprinkle the remaining mozzarella on top.
  8. Broil for 2-3 minutes until the cheese is melted and bubbly.
  9. Garnish with fresh parsley before serving.

Notes

Make sure to properly roast the spaghetti squash until tender. Customize with different veggies or cheeses for variety.
