Cheesy Buffalo Chicken Burritos blend spicy, cheesy flavors wrapped in a tortilla, perfect for gatherings or quick meals.

- 1 ½ lb boneless skinless chicken breasts or thighs, trimmed
- 1 tbsp olive oil
- 1 tsp kosher salt
- ½ tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp smoked paprika
- ⅔ cup buffalo wing sauce
- 2 tbsp unsalted butter
- 1 ½ cups shredded cheddar cheese
- 1 cup shredded Monterey Jack or pepper Jack cheese
- 4 oz cream cheese, softened
- ½ cup sour cream or plain Greek yogurt
- ¼ cup finely chopped green onions
- ¼ cup finely chopped fresh cilantro (optional)
- 1 small jalapeño, finely minced (optional)
- 6 –8 large flour tortillas (10-inch)
- 1 ½ cups cooked rice
- 1 cup canned black beans, rinsed and drained
- 1 cup corn kernels
- 1 cup shredded lettuce or finely shredded green cabbage
- 1 small red onion, thinly sliced
- 1 large tomato, seeded and diced
- Extra buffalo sauce, for drizzling
- Ranch or blue cheese dressing, for serving
- Extra shredded cheese, for topping
- Lime wedges, for squeezing
- Extra chopped cilantro and green onions, for garnish
Instructions
- Pat chicken dry, cut into bite-size pieces, and toss with oil and seasoning. Cook in a skillet over medium-high heat until done.
- Add buffalo sauce and butter to the skillet, simmer briefly, then set aside.
- Combine cheeses, sour cream, onion, cilantro, and jalapeño in a bowl. Fold in warm buffalo chicken.
- Warm rice, rinse beans and corn, and prepare veggies.
- Warm tortillas in a skillet or oven.
- Assemble burritos with rice, chicken mixture, beans, corn, lettuce, onion, and tomato.
- Wrap burritos snugly and crisp in a skillet if desired.
- Serve with extra sauce, dressing, lime wedges, and garnish.
Notes
For added flavor, warm the filling before assembly. Customize with your favorite toppings.
