- 1 cup pumpkin puree
- 1/2 cup maple syrup
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1 teaspoon ginger
- 1/2 teaspoon nutmeg
- 1/2 teaspoon cloves
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, combine pumpkin puree, maple syrup, brown sugar, and vegetable oil until smooth. Beat in eggs one at a time.
- In a separate bowl, whisk together flour, baking soda, baking powder, spices, and salt.
- Gradually add dry ingredients to wet, folding until just combined. Fold in walnuts if using.
- Pour batter into the prepared loaf pan and smooth the top.
- Bake for 60–70 minutes, or until a toothpick inserted comes out clean. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
