  • 1 cup pumpkin puree
  • 1/2 cup maple syrup
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cloves
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine pumpkin puree, maple syrup, brown sugar, and vegetable oil until smooth. Beat in eggs one at a time.
  3. In a separate bowl, whisk together flour, baking soda, baking powder, spices, and salt.
  4. Gradually add dry ingredients to wet, folding until just combined. Fold in walnuts if using.
  5. Pour batter into the prepared loaf pan and smooth the top.
  6. Bake for 60–70 minutes, or until a toothpick inserted comes out clean. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
