- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon

- 1/2 cup butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup marshmallow fluff
- 1 cup powdered sugar
- 1–2 teaspoons milk (as needed)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, combine the rolled oats, all-purpose flour, baking soda, ground cinnamon, ground ginger, ground cloves, and salt. Whisk together.
- Cream the softened butter, brown sugar, and granulated sugar together until light and fluffy.
- Beat in the egg and vanilla extract until fully incorporated.
- Gradually add the dry ingredient mixture to the wet ingredients, stirring until combined.
- Drop portions of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes until the edges are lightly golden brown. Cool completely on a wire rack.
- In a bowl, combine the marshmallow fluff, powdered sugar, and milk. Mix until smooth.
- Spread marshmallow filling on the flat side of one cookie and sandwich with another cookie. Repeat for all cookies.
