  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 large egg

  • 1 cup marshmallow fluff
  • 1 cup powdered sugar
  • 12 teaspoons milk (as needed)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine the rolled oats, all-purpose flour, baking soda, ground cinnamon, ground ginger, ground cloves, and salt. Whisk together.
  3. Cream the softened butter, brown sugar, and granulated sugar together until light and fluffy.
  4. Beat in the egg and vanilla extract until fully incorporated.
  5. Gradually add the dry ingredient mixture to the wet ingredients, stirring until combined.
  6. Drop portions of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes until the edges are lightly golden brown. Cool completely on a wire rack.
  8. In a bowl, combine the marshmallow fluff, powdered sugar, and milk. Mix until smooth.
  9. Spread marshmallow filling on the flat side of one cookie and sandwich with another cookie. Repeat for all cookies.
