- 1 teaspoon ground cinnamon

- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup grated carrots
- 1/2 cup raisins or walnuts (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and ginger.
- In another large bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until combined.
- Gradually mix in the dry ingredients until just combined.
- Fold in the grated carrots and optional raisins or walnuts.
- Drop spoonfuls of dough onto the prepared baking sheet about 2 inches apart.
- Bake for 10-12 minutes or until the edges are golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For best flavor, use freshly grated carrots and ensure butter is at room temperature for creaming.
