Ingredients

  • 1 cup popcorn kernels
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter
  • 1/4 cup corn syrup
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract

Instructions

  1. Begin by popping the popcorn kernels using an air popper or on the stove. Place the popcorn in a large bowl, removing unpopped kernels.
  2. In a medium saucepan over medium heat, combine the sugar, butter, corn syrup, and salt. Stir continuously until it comes to a boil.
  3. Allow the mixture to boil without stirring for about 4 to 5 minutes until it turns golden. Remove from heat and stir in baking soda and vanilla extract.
  4. Pour the caramel sauce over the popped popcorn and mix until coated. Spread onto a parchment-lined baking sheet and allow to cool and harden for at least 30 minutes.

Notes

Store in an airtight container at room temperature for up to a week. For a chewier caramel, reduce cooking time slightly.
