Ingredients

  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped apples
  • 1/2 cup caramel bits
  • 1/2 cup walnuts or pecans (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the egg and vanilla until well blended.
  3. In another bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients until just incorporated. Gently fold in apples, caramel bits, and nuts if using.
  4. Drop spoonfuls of dough onto a lined baking sheet. Bake for 10-12 minutes or until edges are golden brown.
  5. Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For a fun touch, sprinkle a little sea salt on top before baking. Store leftover cookies in an airtight container for up to a week.
