Description

Enjoy the flavors of California rolls in a deconstructed sushi bowl packed with fresh ingredients and vibrant colors, perfect for quick weeknight dinners or lunch.


Ingredients

  • 1 cup sushi rice
  • 1 1/4 cups water
  • 1/4 cup rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 avocado, sliced
  • 1 cucumber, julienned
  • 1 carrot, shredded
  • 1/2 pound imitation crab meat, shredded
  • Soy sauce, for serving
  • Sesame seeds, for garnish
  • Nori sheets, cut into strips (optional)

Instructions

  1. Rinse the sushi rice in cold water until the water runs clear. In a pot, combine the sushi rice and water. Bring to a boil, then cover and reduce the heat to low. Cook for 20 minutes or until the water is absorbed.
  2. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is done, remove it from heat and let it sit for 10 minutes. Fluff the rice and add the vinegar mixture, mixing gently to combine the flavors.
  3. In a bowl, layer the sushi rice, sliced avocado, julienned cucumber, shredded carrot, and imitation crab meat. Arrange the ingredients nicely for presentation.
  4. Drizzle with soy sauce and sprinkle sesame seeds on top. Garnish with nori strips if desired.

Notes

It’s best to consume the assembled bowl right away for optimum freshness and flavor. Leftovers can be stored separately for a few days.
