- 2 salmon fillets
- 8 shrimp, peeled and deveined
- 2 tablespoons Cajun seasoning
- 4 medium potatoes, peeled and diced
- 1/2 cup milk
- 4 tablespoons butter
- Salt and pepper to taste
- 2 tablespoons olive oil
- Chopped parsley for garnish
Instructions
- Begin by boiling the diced potatoes in a pot of salted water until tender, about 15 minutes. Drain and set aside.
- In a large bowl, mash the drained potatoes with butter, milk, salt, and pepper until smooth and creamy. Adjust seasoning to taste and set aside.
- Season the salmon fillets and shrimp with Cajun seasoning. In a skillet, heat olive oil over medium heat. Place the salmon skin-side down and cook for about 5 minutes. Flip and cook for an additional 3-4 minutes until cooked through.
- Add the shrimp to the skillet and cook for 2-3 minutes or until pink and opaque. Plate the creamy mashed potatoes, top with salmon and shrimp, and garnish with parsley.
Notes
For milder Cajun seasoning, start with one tablespoon and adjust to taste. Using Yukon Gold potatoes can enhance creaminess.
