Description

A simple yet satisfying dish that combines cabbage, carrots, onions, and garlic simmered in vegetable broth for a healthy meal option.


Ingredients

  • 1 medium head of cabbage, chopped
  • 2 carrots, sliced
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 4 cups of vegetable broth
  • Salt and pepper to taste

Instructions

  1. Heat a large pot over medium heat with a splash of olive oil or vegetable oil.
  2. Add the diced onion and minced garlic, sauté until the onions are translucent, about 3-4 minutes.
  3. Stir in the sliced carrots and cook for a few minutes until they begin to soften.
  4. Add the chopped cabbage, stirring to combine all ingredients.
  5. Pour in the vegetable broth to fully submerge the cabbage. Season with salt and pepper, bring to a boil, then reduce to a simmer.
  6. Cover and let simmer for about 20-25 minutes, until the vegetables are tender. Adjust seasonings if needed before serving.
