- 2 stalks celery, chopped
- 1 small red onion, diced
- 1/4 cup vegan mayo
- 2–4 tbsp hot sauce (to taste)
- 1 tbsp lemon juice
- Salt and pepper to taste
- Fresh lettuce leaves
- Wraps or tortillas
Instructions
- Mash the chickpeas with a fork or potato masher until slightly chunky.
- Add the chopped celery, diced red onion, vegan mayo, hot sauce, lemon juice, salt, and pepper to the mashed chickpeas and mix well.
- Lay out your wraps or tortillas and add a generous layer of fresh lettuce.
- Spoon the chickpea mixture onto the lettuce, wrap it up tightly, and enjoy!
