Description

A refreshing and colorful way to start your day with an assortment of seasonal fruits and a creamy yogurt dressing.


Ingredients

  • 1 cup Strawberries (washed and cut into bite-sized pieces)
  • 1 cup Green Grapes (washed and halved)
  • 1 cup Red Grapes (washed and halved)
  • 1 cup Blueberries (washed)
  • 1 Apple (washed, cored, peeled, and diced)
  • 1 Banana (peeled and sliced)
  • ¼ cup Pecans (chopped)
  • 1 cup Plain Greek Yogurt
  • 12 tbsp Honey
  • ½ tsp Vanilla Extract
  • ½ tsp Almond Extract

Instructions

  1. Combine all of the fruit (strawberries, green grapes, red grapes, blueberries, apple) in a large bowl. If preparing for later, wait to add banana until just before serving.
  2. In a small bowl, combine Greek yogurt, honey, vanilla extract, and almond extract. Stir until smooth.
  3. Gently fold the yogurt mixture into the bowl of fruit, being careful not to mash the fruit.
  4. Top with chopped pecans for added crunch. Serve immediately and enjoy.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Consider adding the banana just before serving to keep it fresh.
