Description

A comforting and soul-satisfying soup made with tender beef, hearty vegetables, and served alongside warm cheese bread for dipping.


Ingredients

  • 2 pounds beef chuck, cut into chunks
  • 4 cups beef broth
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Cheese bread (for serving)

Instructions

  1. In a large pot, heat some oil over medium-high heat. Brown the beef chunks in batches, ensuring each piece gets a good sear. Once browned, remove them from the pot and set aside.
  2. In the same pot, add the diced onion, sliced carrots, diced celery, and minced garlic. Sauté these vegetables for about 5 minutes or until they soften and become fragrant.
  3. Add in the tomato paste, dried thyme, and bay leaf, stirring to combine everything evenly. Return the browned beef to the pot and pour in the beef broth. Bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for about 2 hours, or until the beef is fork-tender.
  4. Before serving, taste the soup and season with salt and pepper to your liking. Serve the soup hot, with warm cheese bread on the side for dipping and sopping up all that delicious broth.

Notes

For best results, allow the soup to simmer slowly and feel free to add fresh herbs or additional vegetables as desired.
