- 8 oz Boursin cheese
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 cup fresh spinach
- 1 tsp garlic powder
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Combine Boursin cheese, spinach, garlic powder, salt, and pepper in a mixing bowl until well mixed.
- Stuff each chicken breast with the cheese mixture, ensuring they are filled generously.
- Mix breadcrumbs and Parmesan cheese in a separate bowl. Coat the stuffed chicken breasts with olive oil and then roll them in the breadcrumb mixture.
- Place the chicken in a baking dish and bake for 25-30 minutes or until the chicken is cooked through and the juices run clear.

Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) to maintain the crispy coating.
