  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 4 (8 ounce) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup heavy cream
  • 1/2 cup chocolate chips
  • 1/2 cup milk
  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven to 325°F (165°C). In a bowl, combine the graham cracker crumbs, sugar, and melted butter. Press this mixture firmly into the bottom of a 9-inch springform pan to form the crust.
  2. Beat the softened cream cheese, sugar, and vanilla extract in a large mixing bowl until smooth and creamy. Add the eggs one at a time, ensuring each is well incorporated.
  3. Pour the cream cheese mixture over the prepared crust in the springform pan. Bake in the preheated oven for about 1 hour, or until the center is set. Remove from the oven and let cool in the pan.
  4. Heat the heavy cream in a saucepan over medium heat until simmering. Pour the hot cream over the chocolate chips in a bowl and let sit for a few minutes. Stir until smooth and glossy. Pour the ganache over the cooled cheesecake, then mix the milk and powdered sugar until smooth and drizzle over the chocolate layer. Chill in the refrigerator for at least 4 hours before serving.
