Delightful yogurt bites bursting with fresh blueberries and creamy yogurt, perfect for a healthy snack or dessert.
Ingredients

- 1 cup fresh or frozen blueberries
- 2 tablespoons granulated sugar or honey
- 1 tablespoon water
- 1 teaspoon lemon juice
- 1/2 teaspoon cornstarch mixed with 1 tablespoon cold water (optional)
- 2 cups Greek yogurt, plain or vanilla
- 2–3 tablespoons honey or maple syrup, to taste
- 1 teaspoon pure vanilla extract
- 1 small pinch fine sea salt
- 1/2 cup granola or crushed digestive biscuits (optional)
- 2 tablespoons finely chopped nuts (optional)
- 1–2 tablespoons shredded coconut (optional)
- Nonstick cooking spray or neutral oil for greasing molds
Instructions
- In a small saucepan, combine blueberries, sugar or honey, and water. Cook over medium heat until berries begin to burst, about 5–7 minutes.
- Gently mash some berries, stir in lemon juice, and adjust sweetness. For a thicker swirl, add cornstarch slurry and cook until thickened.
- In a medium bowl, mix Greek yogurt with honey or maple syrup, vanilla, and salt until smooth.
- Prepare molds with nonstick spray or oil.
- Combine optional ingredients (granola, nuts, coconut) in a small bowl. Press mixture into molds.
- Fold half of the cooled blueberry sauce into the yogurt for swirls.
- Spoon swirled yogurt into molds, add dollops of reserved blueberry sauce, and create additional swirls.
- Freeze until firm, at least 3–4 hours or overnight. Pop out and serve!
Notes
These yogurt bites can be customized with various fruits. Store in an airtight container for up to 2-3 weeks.
