Description

These Blackberry Crumb Bars are a delightful treat that combines sweet and tangy flavors with a buttery, crumbly topping.


Ingredients

  • 2 cups fresh blackberries
  • 1 tablespoon lemon juice
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon cornstarch
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup rolled oats

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line an 8-inch square baking pan with parchment paper.
  2. In a bowl, gently combine the blackberries, lemon juice, granulated sugar, vanilla extract, and cornstarch. Set aside.
  3. In another bowl, mix the flour, baking powder, salt, brown sugar, oats, and softened butter until crumbly.
  4. Press half of the crumb mixture into the bottom of the prepared baking pan. Spread the blackberry mixture over the crust, then sprinkle the remaining crumb mixture on top.
  5. Bake for 30-35 minutes until the top is golden brown and fragrant. Allow to cool completely before slicing into squares.

Notes

For best results, let the bars cool completely before slicing. Store in an airtight container for up to three days, or refrigerate for up to a week.
